Looking for Walleye in Cider recipe

Zach, 
I miss seeing you and your dad on TV! I am looking for a recipe from wayyyyyyy back in the Fred Trost Michigan Outdoors era called Walleye in Cider. I looked through my cookbook from shows back then, but can't find it. If anyone has a good log of recipes back then or remembers it like me, please forward it to cudatime2@aol.com

Tom:

I cannot locate the actual recipe myself, but plan to continue to dig for it. In the meantime, I do have this recipe you may like. 

  a.. 2 lbs. walleye fillets 
  b.. 2 1/3 c. cream 
  c.. 1 1/3 c. sweet or hard apple cider 
  d.. 2 tbsp. chopped shallots 
  e.. 1/4 c. pernod or anisette 
  f.. 1/4 c. calvados or applejack 
  g.. 1/2 clove minced garlic 
  h.. 1/4 tsp. chevril 
  i.. salt and pepper to taste 

Directions: 
Allow fillets to stand unwrapped at room temp. 20 minutes. Cut each block into 3. Stir together apple cider, cream and shallots in a large Dutch oven. Add fish. Cover. Simmer slowly for 20 minutes. DO NOT allow to boil. Remove fish and keep warm. Reduce cooking liquid by one half. Add perno! d, calvados, garlic, salt and pepper. Sprinkle fish with finely chopped apple cider and pour sauce over top.
