Ingredients
- 1 lb fish fillets of your choice
- 1/4 cup margarine or cooking oil
- 1 cup chopped onion
- 2/4 cup chopped green pepper
- 1 clove garlic, minced
- 1 tablespoon all-purpose flour
- 1 1/2 teaspoon chili powder
- 1 1/2 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon (or less) cayenne pepper
- 1 can tomatoes, undrained
- 1 can tomato sauce
- 1/2 cup water
- 2 cups hot cooked rice
Skin fillets, cut into 1 1/2 inch pieces.
In a Dutch oven, melt margarine, add onion, green pepper and garlic.
Cook over medium heat until vegetables are tender, not brown.
Combine flour, chili powder, salt and cayenne pepper, stir into vegetables.
Add tomato's, tomato sauce and water.
Simmer 4 to 6 minutes.
Add fish, reduce heat, cover and simmer for 10 to 15 minutes longer or until fish flakes easily.
Serve with cooked rice.
Makes 6 servings.
