  • 16 smelt cleaned
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup cornmeal
  • 1/2 cup flour
  • 1/2 cup butter
  • 3 tablespoons cooking oil
Directions

Rinse cleaned fish in cold water, pat dry.
Season fish with salt, pepper.
Mix cornmeal and flour together.
Roll fish in mixture.
Heat the butter and cooking oil in skillet and fry smelts 2 or more at a time, about 3 minutes each side.
