Lobster Bisque


Ingredients

  • 1-2 packages of pre-cooked lobster
  • 2 tablespoons butter or margarine
  • 2 tablespoons chopped shallots
  • 2 tablesppons chopped chives
  • 1 tablespoon flour
  • 3 cups milk
  • Salt to taste
  • Pepper to taste
  • 2 to 4 tablespoons light sherry
  • 1/2 cup heavy cream

Melt butter or margarine in large pot.
Saute shallots and lobster in melted butter or margarine, remove when tender, set aside.
Stir flour into butter or margarine left in pot. Cook for 2 to 3 minutes, then add milk, stirring at you add and continue until mixture reaches the boiling point. Turn heat down to a low simmer, stir in lobster, shallots and chives.
Stir frequently.
When lobster begins to fall apart, remove pot from heat, stir in salt, pepper, sherry and cream. Stir well.

Makes 4 to 6 servings.
