CRISP FRIED RATTLESNAKE


Rattlesnake cut into 3-inch pieces

  • ¼-cup oil
  • 2 tbsp. lemon juice
  • 1 tsp. salt

Fritter Batter (Recipe Below)

Oil

Marinate Rattlesnake meat in refrigerator overnight in lemon juice, oil, and salt, basting meat occasionally. Wipe meat dry and dip pieces in Fritter Batter. Deep Fry Rattlesnake in a fryer or heavy skillet.

Fritter Batter

  • 1 egg
  • ½-cup milk
  • ½ cup plus 1 to 2 tbsp. of self-rising flour

Beat egg and milk, then stir in flour. Let batter rest about 20 minutes. Batter should be very thin like cream. Only thin batter will fry up crisp.
